Lemon Meringue Cookies

I like meringues. With the main ingredients being just egg whites and sugar you don't feel too guilty eating them. They are light and satisfying.

I haven't made them in awhile- my standby is chocolate meringues- but I saw Raspberry Meringues on Created by Diane and thought I'd give them a try.

I had a craving for something lemon though so I went with that for my flavoring. I used the same recipe linked above except I substituted lemon extract for the raspberry extract.
